as promised....Maple Glazed Brussels Sprouts with Pancetta December 20, 2014 06:00

As promised today I am sharing the delicious recipe for MAPLE GLAZED BRUSSELS SPROUTS WITH PANCETTA - personally I love brussels sprouts but I know they are not a favourite of many people...this recipe that I got fromThe Vancouver Sun may just convert a few ;)

2 1/2 pounds of fresh brussels sprouts

1 TBSP olive oil

2 ounces of pancetta or 3 slices bacon

3 TBSP maple syrup

1 tsp fresh lemon juice

salt and pepper

Bring large pot of salted water to a boil.

Meanwhile, trim the ends from brussels sprouts.  Pull away and discard the outermost dark leaves.  Add sprouts to boiling water and simmer, uncovered, for 5 to 8 minutes or until tender-crisp; drain in colander.  Meanwhile, heat oil in large pot over medium heat; add pancetta and cook for 3 minutes or until just beginning to crisp, stirring frequently.Remove pot from heat; with slotted spoon, remove pancetta and reserve.  Drain off all but 1 tablespoon fat from pot.  Add maple syrup, lemon juice to pot; stir to mix.  Add sprouts; toss to coat.  Return pot to heat; cook for 1 minute or until heated through.  Sprinkle with reserved pancetta; toss.  Add salt and pepper to taste.  Transfer sprouts to serving platter.

Hope you enjoy and tomorrow I will share the Cranberry Orange Sauce with Port...mmmm
